My love of cooking started many years ago helping my mother bake cookies for the holidays. I decided that baking was my career goal while still in middle school, when I had the opportunity to do a research paper on bakeries. In high school I was fortunate to go to vocational classes for cooking and baking at Levittown Memorial in Levittown, New york. I began competing and I won my first competition while there. I continued my education at Johnson & Wales University in Providence Rhode Island and graduated in 1996. My first opportunity after I graduated, was as a Pastry Chef at a private country club in Locust Valley, New York. It was there that I had the honor to first work under the direction of Master Chef John Johnstone and later Chef Keith Armstrong. I have continued my career working as a Pastry Chef in Florida where I reside with my wife and 3 children.

I would like to add that I would not be where I am without the support of my parents, Jean & Jim Hayes. I'd like to take this opportunity to thank them. I would also like to give a very special thank you to my wife, Angela for all her help and support with my dreams of owning my own bakery. BUT- my biggest thank you goes to my three kids, James, Anna & Jackson for the inspiration to work hard and fulfill my dreams. I love you all!
